hey, friends!!

i love being in the kitchen, usually baking, but one of my goals for this summer was to cook at least one meal a week. here’s are some of my favorites, plus some snacks and sweet treats!

green goddess bowls

a zupa’s cafe copycat, which tastes amazing and is so fresh! i also added parmesan to the chicken while it was cooking and it was delicious!

  • the bowls: spring mix or butter lettuce
• rice
• grilled chicken
• edamame
• sugar snap peas
• cucumber
• avocado
• fresh parmesan cheese
  • the dressing: blend together:
• 1 cup greek yogurt
• 1 cup parsley
• 1 cup mixed herbs (dill, mint & basil)
• 2 tbsp chives
• 2 tbsp lemon juice
• ½ tsp lemon zest
• 1 tbsp olive oil • 1 garlic clove
• salt + pepper
hamburger bowls
  • ground beef • potatoes • lettuce • tomatoes • pickles • onion • cheddar cheese • ketchup/mustard/mayo
  • slice potatoes into fries, add melted butter & salt. cook for 35-45 mins at 425. cook ground beef & add your favorite seasonings (we usually do salt, pepper, garlic). prep all your toppings then assemble your bowls.
smashed date cookie dough bars

these are a really good no bake dessert for when you want something sweet but don’t want to turn your oven on bc it’s a million degrees outside!

  • 3/4 cup creamy peanut butter • 1/3 cup maple syrup • 1/4 cup coconut oil, melted and cooled • 1 tsp vanilla extract • 1 and 1/4 cup almond flour, lightly packed • pinch of sea salt • mini dark chocolate chips • 9-10 medjool dates • •1/2 cup chocolate chips • 2 tsp coconut oil • flaky salt
  • line a 9×15 loaf pan with parchment paper. mix together the peanut butter, maple syrup, melted and cooled coconut oil, vanilla extract. add in the almond flour until a cookie dough texture is achieved. fold in the mini chocolate chips.
  • press the peanut butter cookie dough into the lined pan. smash the dates by pitting them, and placing them on top of a sheet of parchment paper, with another sheet of parchment paper right on top. use the back of a measuring cup or bottom of a bowl to press the dates until they are smashed and flattened. press the smashed dates into the top of the cookie dough layer in the pan.
  • melt the chocolate chips in the microwave with the coconut oil in 15 second increments, stirring between each interval until smooth and glossy. pour on top of the dates and spread until it’s evenly distributed. sprinkle with flaky salt. place in the freezer to set for 1 hour. remove, slice, and enjoy!! best stored in the freezer.
peanut butter frozen yogurt

i don’t know if this actually counts as frozen yogurt, but either way it’s so good, simple, and a really yummy protein dessert!

  • 1 cup yogurt (too good vanilla is my fav!)⋅ 2 tbs peanut butter ⋅ 2 tbs melted chocolate chips ⋅ peanuts to sprinkle on top
  • stir peanut butter and yogurt together ⋅ pour melted chocolate on top to create a shell ⋅ sprinkle with peanuts ⋅ freeze for 15-45 mins depending on how frozen you want it ⋅ enjoy!!

    avocado and eggs on sourdough toast

    i’m not kidding when i say i ate this for breakfast for six months straight (i’m a little tired of it now haha). it’s delicious and quick! if i want extra protein, i’ll add some sausages to go with it, and i always love adding fruit, esp strawberries or raspberries!

    • sourdough (ideally it’s homemade except i’m not talented enough to make sourdough, but aldi’s brand of sourdough is amazing!)
    • 2-3 eggs
    • avocado
    • garlic salt
    brown sugar shaken espresso

    my favorite drink lately!! i love adding cold foam using milk + a splash of sweet cream creamer.

    • brown sugar ⋅ double shot of espresso ⋅ milk of choice (i always use whole)⋅ cinnamon ⋅ vanilla ⋅ salt ⋅ ice
    • pour your shot of espresso over brown sugar (use however much you like depending on how sweet you like your coffee), cinnamon, salt, and vanilla. shake up your shot for 10-15 secs. add 4-6oz of milk to a cup of ice. pour in your espresso. enjoy!!
    cream cheese mini stuffed peppers

    i love these as a snack or adding them to a snack plate for lunch.

    • mini peppers
    • filling: cream cheese or cottage cheese
    • seasoning: everything bagel seasoning
